Rinse away all the water of the dal and add it into a mixer grinder jar . Now grind it well into a smooth paste , using as little water as possible . Make sure to stir it in between while grinding , as it will ensure even grinding.

Now in an iron kadhai take half cup of ghee. As the ghee melts , on low to medium flame , to it add the prepared moong dal paste and immediately start to stir it to prevent the risk of lumps formation and dal sticking to bottom of kadhai.

Stir the mix continuously and thoroughly , scraping the bottom of kadhai to scrape the dal that might get stick to the bottom. Also if any lumps get formed in the mixture just try to mash them with the back of the spatula while roasting the dal.

Stir and roast the dal until all the water gets evaporated and the dal turns light and fluffy. It might take about 30 mins.At this stage the mix would look like this-

At this point keep an eye on and roast it till it gets beautiful golden in colour and it no longer has the raw dal smell. Be careful as the colour should get too dark and also it should not be raw.

Once it is roasted completely add 1 cup of milk and 2 tblespoon of saffron water(10 to 15 stands of saffron soanked in luke warm water for min of 15 minutes). Mix it will and roast it well for another 5 to 7 mins on medium to low flame.

While the mix is being roasted in an a other pan set 1 cup of water for boil.

As the dal and milk mix is drying out to it add 1 teaspoon of cardamom powder.

After the dal has soaked up all the milk and is well roasted to it add the boiling water that was set up on stove in another pan .

Make sure the flame is low while adding water and be carefel as the mix may splutter on adding water if it is too hot.

Add all the water at once and then quickly stir it to avoid lumps. Stir it will till water gets absorbed.

Once water gets absorbed add in 1 cup of sugar and mix till the sugar dissolves.

(Now one might need to add a little bit of water or milk if the halwa seems to be dry or if it is too wet you can roast it a little more)

At last add 2 tablespoon of ghee and raost it for last 3 to 5 minutes.

And that's it now the halwa is ready to be served. Do not forget to garnish it with chopped dry fruits of your choice .
